Founded by Ed Encisa and Rico Rosales, the restaurant whose name means “bahala na si Chef” in Filipino, Omakase gained popularity by serving authentic Japanese dishes much to the delight of the public. Ed had a budding career as a chef in a Japanese restaurant in the United States when the 9-11 bombing broke out, forcing him to come home earlier than he expected due to the threat of terrorism. With his brother in-law Rico, they opened an over-the-counter sushi takeout, which later burgeoned to be the restaurant that every Japanese food-loving Filipino raves about.
